The truffle perishes in days, so the only thing that can be held is the orchard. RoutesSale of the orchard as farmland with trees; produce sold weekly through wholesale markets (Richerenches in Vaucluse, Saturdays, mid-November to mid-March; Carpentras; Alba's weekend market from 10 October to 6 December) or to dealers and restaurants direct. The charity auction at Alba is publicity, not a route.13 14 15High ActivityAlba white truffle averaged €4,727/kg on 21 October 2026 (€3,200 for small, €6,000 for over 50 g); black truffle wholesale on the Carpentras mercuriale ran €150–700/kg across the 2025–26 season, €700–1,000 in peak weeks at Richerenches. Orchard sales are private and unrecorded.13 14 15ReportedMed CostProduce: market and dealer margins between the €700–1,000 wholesale and €800–1,500 retail for black; grading and spoilage losses fall on the seller. Orchard: agent and legal fees on a land sale, and a buyer who will discount unproven yield.14DerivedMed TimeProduce: sold within the week it is dug, cash at market. Orchard: months to a year, as for any specialist agricultural property; valuation depends on yield history the seller may not yet have.DerivedMed

Since last update

The 96th Alba White Truffle Fair opens 10 October and runs to 6 December. No 2026 season prices have been published yet; the regime line stands until the first weekly Alba boards are posted.12

Why Σ4

White truffles are priced weekly at Alba and other markets and perish within days. Black truffle orchards first yield five to eight years after planting; white truffle cultivation has produced only small experimental harvests, first recorded in France in 2019. The route is truffle orchards, so exit means selling land.

Two fungi, two markets. The white truffle of Alba cannot be cultivated, keeps for days, and is priced by charity auction and word of mouth; the black Périgord truffle is farmed on three continents and quoted every Saturday in a Provençal market square. Between them sit a dozen lesser species, a synthetic aroma industry, and a substitution problem that mirrors vanilla's. This page is an overview of species, geography, the auction ritual, cultivation and integrity. Prices appear only as dated observations, never as live values.

The two commercially important species are separated by one biological fact: melanosporum can be inoculated onto oak and hazel seedlings and farmed, magnatum cannot. Everything else in this market, the price ratio, the auction ritual, the fraud pattern, follows from it.3 4 High

On reading these numbers: a charity-auction result for a one-kilogram specimen is not a market price, and one guide explicitly refuses to normalise auction lots into a commercial range. Retail bands, wholesale quotes and auction records are three different things and are shown here with their labels. None is a current price.11 8 High

The Alba fair and its auction, held for more than 90 years, is the price-discovery event for a product with no exchange; bidders join by video from Hong Kong, and the results are reported worldwide. Demand from top restaurants, particularly in Asia, kept rising through the 2025–26 season while Italian volumes fell c.30% on weather, and Istrian hunters attribute shrinking harvests to climate change and deforestation.10 3 4 Med

Wholesale prices are set every Saturday at Richerenches in the Vaucluse and sit below retail by the cost of sorting, grading, freshness guarantee and service; prices rise into December on festive demand and ease in February when production peaks. France, Spain and Italy produce the same species, and origin carries a premium that the truffle itself may not justify.3 A 1.2 kg black truffle set a black-truffle auction record of $50,000 in 2018.9 Med

Cultivation has done to the black truffle what aquaculture did to caviar: made it a farm product with a seasonal price curve, while leaving the wild sibling (magnatum, beluga) to carry the mystique and the auction headlines. Spanish plantations in Teruel and Soria and Australian orchards in Manjimup and Tasmania now supply the northern winter and the southern counter-season respectively; verified tonnage by country was not found for this page and is not asserted. IVRitual and history

How a fungus became a luxury.

1930s
The Alba white-truffle fair institutionalises the Piedmont trade; the auction has run for more than 90 years.10
2010 & 2014
Two giant Italian whites sell for a combined $417,200, one of 1.3 kg for $330,000 to a Hong Kong buyer.9
2018
An 850 g Alba white sells for c.$200,000; a 1.2 kg black sets the black record at $50,000.9
2021
830 g Alba white exceeds €100,000 at the charity auction.5
Nov 2022
700 g white sells in Rome for €184,000 to a Hong Kong bidder.10
Nov 2025
1.009 kg Alba lot at €110,000; the World Truffle Auction raises €1.13 m for charity; the season's Italian volume is down c.30%.1 2 3

The Hong Kong buyer recurs because the truffle, like the Toyosu tuna or the Behike, is a public act of consumption: the price paid is the product. Export markets named by Istrian and Spanish sellers include the United States, Japan and the United Arab Emirates.5 Med

VIntegrity and substitution

The vanilla problem, with mud on it.

RiskMechanismControl
Species substitutionChinese Tuber indicum sold as Périgord black at near-equal price despite a bland profile7Latin name and origin on the invoice; PGI Alba and Périgord labels7
Synthetic aroma"Truffle oil" made with 2,4-dithiapentane and no truffle7Ingredient labelling
Origin launderingSpanish or Eastern European product sold as French or Italian at the origin premium3Dealer reputation; third-party scent tests7
Grade inflationFirst-grade or pieces sold as "extra"3Sorting at Richerenches; buyer inspection

The market's defence is provenance, not chemistry: aroma compounds can be synthesised and the black species look alike, so the buyer pays for the seller's word and a geographic label. As with vanilla and vanillin, the synthetic has already taken the mass market; the natural product survives on sensory complexity and the story of where it came from.7 Med
