Prices at origin rose a fifth to a quarter in 2025 as exports passed half of sales and Italians bought less; the only food on this site that a bank will lend against.1High

First entry. 2025 production 4.19 m wheels (+2.7%); exports 50.5% of sales for the first time; 12-month wheels €13.22/kg (+20.6%), 24-month €15.59/kg (+24.8%); Italian volumes sold −10%. Fortune reports the summer 2026 heat as a threat to maturation and to the cheese banks' stock.123
A whole wheel is a standardised, consortium-certified, individually numbered unit with a published price by age, and one Italian bank has lent against it for seventy years without a loss. That is more financial infrastructure than most markets on this site. The grade is still Σ4 because the holder must be in the trade: the wheel has to be kept turning in a climate-controlled warehouse, sold into a wholesale market that a private holder cannot reach, and eaten within a few years. There is no route for anyone else.
The Σ grade is ΣΟΦΙΑ's opinion of how practical the asset is to hold. Not a view on return. How it is judged →
A food that behaves like a commodity with a bond attached. Every wheel is made to the same recipe in the same five provinces, inspected at twelve months, fire-branded by a consortium, and logged by number; its value rises on a known curve as it ages; and since 1953 Credito Emiliano has taken young wheels as loan collateral, warehoused them, and sold them if the dairy defaults. This page covers the consortium system, the market's size and the 2025 price jump, how the cheese bank works, the fraud and climate risks, and what to watch. No prices are carried as live values.
A PDO that functions as a quality grader, a production regulator and a brand owner at once.
Parmigiano Reggiano is a protected designation of origin: raw cow's milk, salt and calf rennet, from cows fed on local forage, made in about 300 dairies in five provinces of Emilia-Romagna and Lombardy. The Consorzio del Formaggio Parmigiano Reggiano, founded 1934, writes the rules, inspects every wheel at twelve months by tapping it with a hammer, fire-brands those that pass and marks those that do not, operates production-planning quotas on the dairies, and defends the name in court worldwide.56 High
| Age | Consortium mark | Use and price position |
|---|---|---|
| Under 12 months | None; not yet Parmigiano Reggiano | Pledged to the bank at this stage; the collateral is a wheel that may still fail inspection |
| 12 months | Fire-brand oval; "Mezzano" if second grade | Minimum age; €13.22/kg at origin in 20252 |
| 18 months | Optional "Extra" / "Export" marks | The export and retail standard |
| 24 months | Age stamp | The reference grade for pricing; €15.59/kg in 20252 |
| 30–40+ months | Age stamp; "Stravecchio" in trade usage | A premium of 30–60% over 24-month; small volumes; weight loss and cracking risk rise with age |
Each wheel carries the dairy number, month and year of production and a casein plate with a unique alphanumeric code, pressed into the rind at making. The wheel is therefore traceable to the day and the vat, which is what makes it bankable. High6
Production up, Italian consumption down, exports past half, prices up a quarter.
The consortium reports 4.19 m wheels in 2025, up 2.7% on 4.079 m; the industry is valued at around $4.7 bn at consumer level. For the first time exports exceeded half of sales, at 50.5% or 74,980 tonnes, with non-EU markets up 4.2%. At home, volumes sold fell 10% as prices rose: Italians bought less often and in smaller pieces, though the number of households buying held. Prices at origin rose 20.6% for 12-month and 24.8% for 24-month wheels.123 High
Credito Emiliano has lent against wheels since 1953 and says it has never lost a euro.
A dairy pays its farmers every thirty days and sells its cheese a year or more later. Credem bridges the gap: a dairy delivers young wheels to Magazzini Generali delle Tagliate, the bank's warehouse subsidiary at Reggio Emilia and Modena, receives 60–80% of the wheel's value as a loan, and the warehouse turns, brushes and monitors the wheels through maturation, charging a fee. If the dairy defaults, the bank sells the matured cheese. The warehouses hold about 500,000 wheels, worth over €300 m, out of roughly 4 m made a year, and handle 2.3 m wheels a year including non-collateral storage. Since 2024 a blockchain register has allowed wheels to be pledged while remaining in the dairy's own store, which the bank says has doubled its lending capacity.347 High
| Feature | How it works | Why it matters |
|---|---|---|
| Standard unit | Every wheel the same recipe, size and inspection | The bank can value by age and weight without tasting |
| Appreciating collateral | Value rises as the wheel ages toward 24 months | The loan-to-value falls over the term without repayment |
| Custody by the lender | Wheels physically held and maintained by the bank's subsidiary | No dispute over existence or condition; the warehouse is the vault |
| Liquidation market | Wholesale buyers for matured wheels at the published price | The bank has an exit the dairy's creditors do not |
| Loss record | None reported in seventy years | The collateral works because the market is organised, not because cheese is special |
The wheel is honest; the grated product and the weather are not.
| Risk | Form | Control |
|---|---|---|
| "Parmesan" and imitations | Generic hard cheese sold under the English name in the US and elsewhere; the consortium estimates imitation sales exceed the genuine article outside the EU | EU PDO protection; litigation; no protection for "Parmesan" in the US |
| Grated and pre-packed fraud | Rind, wood pulp (cellulose) and cheaper cheese in products labelled Parmigiano Reggiano; the 2016 US cellulose cases | Consortium-approved packers; the dotted rind in every piece; none of this touches whole wheels |
| Stolen wheels | Warehouse thefts, sometimes of thousands of wheels at a time | Casein plate and, since 2023, microchips in the casein for traceability |
| Heat and maturation | Summer heat stresses cows and reduces milk; warehouses need cooling; wheels can crack or spoil | Climate-controlled storage; the 2026 heat waves are the live concern for the cheese banks3 |
| Animal disease and feed | Rules restrict silage and require local forage; a disease outbreak or drought moves supply | Consortium production planning |
