Holding horizon
28–30 months · the animal
A black wagyu steer is bought as a calf at 8–10 months and finished at about 30, so the production holding is two years and the cash is tied to a live animal that is graded only once, after slaughter. Herds and land are held for decades; a listed producer is an ordinary equity.10 11DerivedMed

RoutesFinished cattle sell at one of about 170 licensed carcass auctions in Japan to registered wholesalers, after JMGA grading; calves at prefectural calf markets. Herds and feedlots change hands privately; a handful of producers and traders are listed in Tokyo. Outside Japan, Australian and US wagyu operations sell as farms.10 5High ActivityA5 carcasses auctioned at ¥3,200–4,000/kg in 2026; the Tokyo wholesale weighted average for A5 was about ¥2,450/kg in August 2025 after a four-year low of ¥2,377 in July 2024. Black wagyu calves averaged ¥1,733/kg in mid-2024. Exports reached a record 12,628 t in 2025, with A5 striploin at US$120–190/kg FOB.10 11 5ReportedMed CostAuction and processing fees (an agent quotes ¥250–550/kg for cutting a half carcass), feed over 20 months of finishing, and the grading risk that an A4 result cuts the price by a quarter. Farm sales carry agency and transfer costs; export adds freezing, certification and 15–25% to FOB.10 12Med TimeA finished animal sells at the next weekly auction and is paid within days; a calf the same at its monthly market. A herd or farm takes months to place with an operating buyer, since the asset must be fed in the meantime.10DerivedMed

Why Σ3

Japanese carcass grading supports wholesale price discovery. Since 2020 Japanese law has made unauthorised resale or export of wagyu genetic material a criminal offence, so the breed cannot be replicated abroad from Japanese stock. The route is herds, land and listed producers; exit is slow and needs an operating buyer.

A farmed animal graded so rigorously that the top grade has stopped being scarce: three-quarters of the Japanese market is now A5, and the growth is in export. This page covers the breed registry, the grading regime, the brand councils that sit above it, and the export trade. No prices are carried as live values.

Discrepancy logged: a European breeder's guide states that "only about 3% of Japanese wagyu achieves" A5; Nikkei Asia reported in June 2026 that A5 accounts for over 75% of Japan's wagyu market. The Nikkei figure describes the market as of June 2026; the 3% is either historical or wrong. Grade inflation is the story, not scarcity.6 8 High

Every retail cut carries a seal and a ten-digit traceability number that can be checked on a phone, a provenance system the diamond trade is still building.2 Regional cooperatives control breeding, feed and marketing, which sustains the brand mystique but makes quality metrics hard to standardise internationally.9 High

Shares of 2025 beef exports per MAFF "Wagyu Supply and Demand Trends" as reported.1

Japan's export strategy set a target of ¥2 trillion in agricultural exports by 2025 and ¥5 trillion by 2030, with wagyu among the flagship products.2 At home, A5 saturates the market as inflation-hit consumers shy away from the most expensive cuts, which is why producers are pushing the top grade into export; pandemic-era inventories have returned to near pre-pandemic levels.8 1 Restaurant wagyu can price at four to ten times USDA Prime, and A4 is the volume workhorse of export at 35–50% below A5; crossbred F1 wagyu trades at a discount regardless of marbling.9 5 Med

Discrepancy logged: the export strategy's second target is quoted as "5 trillion yen by 2025" in one source, which is a typographical error for 2030, the government's published target year. Corrected here.2 Med

Scarcity signalRising ceremonial price, falling commercial priceA5 at 75%+ of market: the top grade has stopped being scarce

In both cases the Japanese system grades rigorously and then lets a place-name or a ceremony carry the luxury premium above the grade. The bluefin premium is defensible because the wild fish is genuinely finite; the wagyu premium is under pressure because the grade it rests on has become the norm.8 3 Hyp
